Thai seafood soup and grilled halibut for Iftar

I know a lot of people skip the fish and seafood all together in Ramadan, as they tend to digest faster than meat and chicken, I find that I can make up for that with a good sohour, I find fish and seafood light enough on the stomach in Ramadan, allowing me to feel light and energetic after Iftar.

Today I made a Thai seafood soup, grilled basil butter halibut and sweet potato mash, they were delicious and filling and all the family loved the meal.

Thai Seafood Soup

340 gm. shrimp

340 gm. mussels

340 gm. baby octopus

1 onion

3 cloves garlic

3 sticks celery

1 cup fresh dill

2 cups shredded cabbage

1 cup mushrooms

1 can coconut milk

5 lime kefir leaves

salt, pepper, turmeric, cumin

Instructions

Heat some coconut oil and sauce the onion, garlic and celery.

Remove from pan, and add the seafood and 10 cups of water and let it boil.

Season with salt and pepper.

Add all the vegetables and lime kefir leaves and let it cook for 5 min, and then serve immediately to avoid over cooking the veggies.

Add the coconut oil and serve

Grilled Halibut with Basil butter sauce

1 1/2 cups (loosely packed) fresh basil leaves

1 large shallot, coarsely chopped

8 tablespoons (1/2 cup) unsalted butter, room temperature

1 teaspoon grated lemon peel

6 6-ounce halibut fillets

Extra-virgin olive oil

4 tomatos cut in wedges

Instructions

Finely chop basil and shallot in mini food processor. Add butter and process until blended, stir in lemon peel and season basil-shallot butter with salt.

Heat a cast iron pan with some butter in it, Rub fish fillets on both sides with olive oil.

Sear for 3 min. on each side, spread the basil butter sauce then put in oven for 7-10 min.

Sweet potato Mash

2 white sweet potato

2 small potato

water

1 tbsp. butter

1 tbsp. nutritional yeast

salt, pepper and nutmeg

Instructions

Peel and cut your potato in cube and cover with water.

let it cook for 20 min or until tender.

Remove any extra liquid and keep just 1/4 cup of the liquid it was cooked in.

Add the spices, butter and nutritional yeast and blend with a hand blender.

Add water if needed.
