The Highlight of my dinner tonight

When having a sensitive gut with gluten sensitivities, you have to always be aware of what you are eating and always trying to find alternatives for the things you love, because after all who can live without a piece of bread, a cheesy pasta or some melting brownies!

I have learned through my experience that everything can be done tasting almost the same with just a bit of creativity and flexibility.

One of things I miss is pasta, so today I got creative with dairy free gluten free pesto pasta, and it tasted Devine, the recipes is below

Buckwheat noodles you can find it here

A gluten free grain that is low glycemic, low in crabs, high in fiber and protein, prefect for people with gut issues, food sensitivities or just trying to loose weight.

it also has a very neutral flavor that goes perfect with any sauce, make sure you cook it at serving time or it gets sticky.

Pesto sauce

2 cups basil

4 cloves garlic

1 tbsp. nutritional yeast (for the cheesy flavor)

¼ cup pine nuts

2/3 cup extra virgin olive oil

Blend all together in to a smooth paste

Serve over cooked warm buckwheat noodles

Turkey balls

1-pound ground turkey

1 chopped onion

2 tbsp. chopped dill, cilantro and parsley

Salt and pepper

Mix all ingredients with a spoon in a bowl, then shape them into balls, put under broil in oven until golden, flip on the other side, leave for anther 5 minutes until golden.

Serve hot
