Gluten Free, Grain Free Paleo Ka7k (sugar cookies)

A gluten free diet is a commitment, that I was willing to go through for me and my kids health, but I didn't want us to be left out of our cultural habits or gatherings, so I tried coming up with substitutes for our Mediterranean desserts that are gluten free yet still taste delicious.This way me and my kids will not feel left out and will get to enjoy with their friends and family.

Grain free and gluten free dessert are also a good option for any one suffering from digestive or immune problems, and perfect for those trying to loose weight, I wouldn't indulge on those cookies on a daily basis but it is a differently a healthier option than our regular white flour version.

 

Gluten Free Ka7k (sugar cookies)

INGREDIENTS

For Kahk

2 cup almond flour

1/2 tbsp. tapioca starch

1 cup melted ghee (samnah)

1 tsp. mahlab (re7et ka7k)

1 tsp sesame seeds

2 tbsp. warm milk with 1/2 tsp yeast and sugar

pinch of cardamon, cinnamon, and cloves

For Filling

1 cup chopped walnuts

3 tbsp Ghee (organic from grass fed cows)

2 Tbsp gluten free flour (better batter)

2 Tbsp sesame seeds

1 Cup Raw honey

INSTRUCTIONS

For filling

  • Heat the ghee then add the flour and cook for a few minutes until golden

  • Take off heat and add walnuts, sesame seed and honey

  • Mix together and let it cool

  • Make it into small balls with your hand and set aside

For Kahk

  • In a bowl sift the almond flour, then mix in mahlab and and spices

  • make a whole in the middle and add the sesame seeds

  • Heat the ghee until boiling, Pour hot Ghee in the middle and then mix with a spatula, rub with your hands for a few minutes until fine with no crumbles

  • Add the yeast and sugar to warm milk and let it stand for 5 min. until frothy

  • Add 1 to 2 Tbsp. of the yeast mixture and mix until you get a firm not runny dough (similar to cookie dough)

  • shape into small balls, flatten with your hand, make a hole and add your filling then close it and decorate

  • leave for 15 minutes to rest then add to 350 degrees oven

  • watch it closely it takes around 8-10 minutes to be golden, it burns out very easily so stay close

  • let it cool completely then sprinkle powdered sugar using a sieve
