Gluten free Basbosa ( Mediterranean dessert)

We have been experimenting with a gluten free diet for the kids the past few weeks because of digestive and immune issues that we think might be due to gluten sensitivity, inheriting a bad gut from ME just makes them much more susceptible to leaky gut and digestive issues which are much more easily dealt with in childhood than left to get bigger.

Yet with kids challenges are much bigger, there are parties with cakes and cookies, their are gatherings that are full of desserts and especially in ramadan people like to get together on iftar and indulge on all the delicious Mediterranean goodies from basbosa to konafa!

I decided to take the challenge and try this ramadan to come up with gluten free alternatives to these desserts, and I have to always have them ready with me when we go to any outside gathering.

My first attempt was pretty successful, inspired from anediblemosaic

 

 

Gluten Free Basbosa

Ingredients:

Sugar Syrup:

this could be replaced with pure raw honey to make a healthier version

  • ½ cup (100 g) sugar

  • ¼ cup (60 ml) water

  • squeeze of lemon

  • ¾ teaspoon rose water or orange blossom water ( optional )

Basbosa:

  • ½ tablespoon butter, to grease the baking pan

  • 1 cup (115 g) almond flour

  • 2 tablespoons tapioca starch

  • ¾ teaspoon baking powder

  • 1 pinch salt

  • 4 tablespoons (50 g) sugar

  • 1 to 1 1/2 heavy cream

  • ½ cup (40 g) unsweetened shredded coconut

Instructions

Prepare the sugar syrup by boiling it on medium heat for a few minutes, let it cool down until your prepare the basbosa.

In a bowl mix all the dry ingredients together, add the 1 cup of cream and mix with a spatula, you need it to be like a pancake batter - not too thick not too thin- depending on the type of almond flour you use you might need anther half cup of cream.

grease the pan

Add the batter to a 6 inch pan and let it rest for a few minutes.

Place in oven at 350 for 20-30 minutes until sides are golden

Pour the syrup on top and let it rest and absorb it before serving

My second attempt is to make Gluten free Ka7k, here are my trials, and I almost got one right, will be sharing my final recipe soon stay tuned.

Other than that, my highlight for this ramadan is green juices to break the fast, they give me a boost of energy and hydration without the unneeded sugar from the regular hibiscus drinks.

1 carrot

1 beet

8 celery stalks

1 cucumber

1 apple

Juice from 1 lemon

NOT YOUR MOMMA’S GREEN JUICE

This juice is full of potassium and nutrients that will de-bloat the body and jumpstart the cleansing process in a safe and natural way. Parsley is rich in iron and great for energy.

1 pear or green apple

2 cucumbers

8 stalks of celery

1 handful of parsley

1 head of romaine

2 lemons, juiced
