Taco Night with A Grain Free Option

Eating healthy can get boring, repetitive, you feel like you need a change! This is mostly because we think that healthy has to be some plain steamed vegetables with a grilled chicken breast.

It doesn't have to be this way, healthy means different colors, fresh food, an array of spices and aromas that boost the flavor, a variety of cooking methods braising, stewing, stir frying or grilling.

You can get very creative and stay on a healthy track, tonight we felt like something different, something quick, easy, kids friendly, and as per my daughters request we opted for a Taco night.

I cut out a variety of vegetables to color their tacos, lettuce carrots tomatoes and guacamole, some organic sour cream, organic corn tacos and some grass fed ground beef cooked to perfection with salt, pepper,cumin and some tomato paste and pieces of tomato.

The Tacos make a big difference here, most commercial varieties are full of added preservatives, sugars just to name a few, I choose an all organic stone ground corn tacos, had only 2 ingredients, and Gluten free as a bonus, don't forget to read the labels of your tacos, this simple step can save your family a load of chemicals for dinner.

The kids really enjoyed the freedom of planning their own tacos, and putting their own vegetables, without me filling their plate for them as usual, which basically is what we aim for, for our kids to be able to pick healthy foods on their own, a little bit of fun helps achieve that goal.

I wanted to do a grain free variety so I used large lettuce leaves to arrange my tacos, it was delicious, and I was very full! I didn't miss on any of the fun!

 

Ingredients

1-pound ground beef

1 small onion, chopped

1-teaspoon olive oil

1-tablespoon chili powder

1 1/2 teaspoons ground cumin

1-teaspoon salt

1/2 can tomato sauce

Taco shells or flour tortillas, warmed

Toppings: shredded lettuce, diced tomatoes, salsa, sour cream, shredded carrots, shredded cheese (optional)

 

Sauté onions

Add ground beef and spices, cook until browned

Add chopped tomato and tomato sauce, let cook until dried and no liquid is left

 

Salsa

2 finely chopped tomato

½ red onion

2 tbsp. finely chopped cilantro

Salt

Lemon or vinegar

 

Guacamole

1 Avocado

1 Chopped Tomato

1 tablespoon chopped fresh cilantro

1/2 red onion

1/2 lemon Juice

Blend all in a blender and season to taste.

 

Arrange your beef in soft or hard taco shells and top with guacamole, sour cream, lettuce, tomato and Enjoy
